A friend gave me the recipe of “Medaglioni” with chicken breast, but I wanted to make a plant-based one. So I replaced chicken breast with chickpeas and potato. The result was pretty amazing and everybody asked for more 😉
Ingredients
Put all the ingredients (except for olive oil) into a blender. Then make little balls out of the mixture and flatten them. Dip them in breadcrumbs and cook them in hot oil until golden brown. For healthy cooking, put them in the oven at 180° for at least 20 minutes. To get the browning, put a few drops of olive oil on the burgers. Add some pepper and serve with salad. Buon appetito!
Tip: if you made too much of the burgers, freeze them before cooking and have them ready whenever you want!
