Tian de légumes

Tian de légumes is a vegetable-baked dish from the south of France. It is made with eggplant, tomato, zucchini, onion, garlic, olives, and extra virgin olive oil, flavored with Herbes de Provence, a mixture of dried herbs including thyme, rosemary, marjoram, savory, and oregano.  It is full of vitamins, phytonutrients, and fibers, but it is also SO tasty!

There are local varieties, including celery, carrots, anchovies, cheese, fish, or meat.

How to make tian de légumes

Essential ingredients to make tian de légumes
  • 2 Zucchini
  • 2 or 3 Eggplant
  • 3 tomato
  • Garlic
  • Herbes de Provence
  • Salt
  • Pepper

Ready to bake tian de légumes
  • Preheat the oven to 180°
  • Wash all the vegetables, drain, and cut into thin slices. Put the pieces into an oiled baking dish, alternating the vegetable slices
  • Add the garlic (chopped), a drizzle of olive oil, salt, and pepper, and bake for 1 hour and a half
  • In the middle of cooking, add water to prevent the vegetables from drying out. To keep the moisture in, you can also cover with foil, which you remove in the last half hour

When the tian is ready, you will smell the unique scent of Provence coming straight to your home!
