Tian de légumes is a vegetable-baked dish from the south of France. It is made with eggplant, tomato, zucchini, onion, garlic, olives, and extra virgin olive oil, flavored with Herbes de Provence, a mixture of dried herbs including thyme, rosemary, marjoram, savory, and oregano. It is full of vitamins, phytonutrients, and fibers, but it is also SO tasty!
There are local varieties, including celery, carrots, anchovies, cheese, fish, or meat.
