Tian is a plant-based baked dish from the south of France. It is made with eggplant, tomato, zucchini, onion, garlic, olives, and extra virgin olive oil, flavored with Herbes de Provences, a mixture of dried herbs including thyme, rosemary, marjoram, savory, and oregano. Not only it is full of vitamins, phytonutrients, and fibers, it is also SO tasty!
There are local varieties of TIAN including also celery, carottes, anchovies, cheese, fish or meat.
Here is how we made it today.
What you need
- 2 Zucchini
- 2 or 3 Eggplant
- 3 tomato
- Herbes de Provence
How to make it
- Preheat the oven to 180°.
- Wash all the vegetables, drain, and cut into thin slices. Put the slices into a oiled baking dish, alternating the vegetables slices.
- Add the garlic (chopped), a drizzle of olive oil, salt and pepper and bake for 1 hour and a half.
- In the middle of cooking, add water to prevent the vegetables from drying out. To keep the moisture in, you can also cover with foil, which you remove in the last half hour.
