Nice Salad

When you go to the south of France, you have absolutely to try salade niçoise, Nice salad, a salad full of the unique flavors of Provence. It is much more than a side dish. It is a whole meal on its own.

Niçois people only put in raw, seasonal ingredients like tomato and lettuce seasoned with extra-virgin olive oil; depending on the season, they put tomato, lettuce, bell pepper, Nice black olives, onion, early Spring fava beans fèvette, and celery.

To make it a complete and balanced meal, they use add protein sources like hard-boiled eggs or canned tuna, or anchovies.

Sometimes you can find all these three ingredients together, and that’s an extra-rich Nice salad! Anyway, the authentic one only has one animal source of proteins.

Salade niçoise with hard-boiled eggs

Instead, as you’ve probably already noticed, elsewhere you can find it with cooked vegetables, like boiled potato, but as they say, it is not the authentic version.

Ingredients for Salade Niçoise

Ingredients

  • Lettuce
  • Tomato
  • Celery
  • Spring onion or onion
  • Black Nice olives
  • Anchovies or canned tuna or hard boiled eggs
  • Early Spring fava beans fèvette
  • Bell pepper
  • Basil leaves
  • Extra-virgin olive oil
  • Wine vinegar
  • Salt and pepper

How to make it – hard-boiled eggs version

  1. Make hard-boiled eggs
  2. Clean the vegetables
  3. Cut the tomatoes, bell pepper, and onions into slices
  4. Cut the celery into small pieces
  5. Slice the bell pepper
  6. Prepare a vinaigrette sauce with extra-virgin olive oil, wine vinegar, salt, and pepper
  7. Put all ingredients in a salad bowl

et voilà! Bon appetit 🙂

Tips

Did you know? Nice salad is the main ingredient of the famous pan bagnat, a sandwich filled with it. So, if you have any salad leftover, make the delicious pan bagnat!

And if you don’t eat animal protein, you can replace it with tofu or chickpea. Or leave it out for a more authentic Nice salad.
