Vegan Blueberry Muffins

This Vegan Blueberry Muffins made our day!

We were craving something sweet, good, vegan, seasonal, and quick to bake. In short, it took longer to decide than to make it!

  • Blueberries (fresh or frozen)
  • One cup of flour
  • One glass of oat milk
  • half a glass of apple juice
  • 2-3 tablespoons of honey (or another natural sweetener of your choice)
  • The grated zest of one lemon
  • A pinch of salt
  • About 3 spoons of extra virgin olive oil
  • a teaspoon of baking powder

The making is really quick.

  1. Turn the oven on to 180°/356°F
  2. Brush with oil and flour some molds
  3. Put the flour, baking powder, oat milk, olive oil, lemon zest, and honey
  4. If you like it rather sweet, you can put 4 tablespoons of honey or use another natural sweetener
  5. Mix well. Gently add the blueberries
  6. Using a teaspoon, scoop the mixture into the molds
  7. Bake for 12 minutes
  8. Let cool.
  9. Enjoy!
